Cranberry Sorbet on Ice

Cranberry puree (from Drunken Pickled Pork)
0.5 cup sparkling apple juice
1 tablespoon lemon juice
Sparkling apple granita (from Drunken Pickled Pork) or crushed ice for serving

Mix everything together except the crushed ice. Freeze in an ice cube tray. To make the sorbet, pulverize the frozen cubes in a blender. Return to the freezer until ready for serving. The sorbet can be moulded. To serve, arrange sorbet (scoops, quinelles or moulds) over the crushed ice.
